It’s been one of the busiest weekends for a while and I’m in dire need of fuel and energy before setting off to my next destination today, only a short trip back to my old University to give a little talk about my career as a blogger. So I’m starting the day right with a breakfast smoothie packed with goodness to get me through the day a head. I wish there was a smoothie to kill nerves. I’m petrified, public speaking couldn’t be further from my comfort zone. Anyway, my nerves are making me ramble.

You Will Need:
1/2 Cup gluten free oats
1/2 Cup 0% fat greek yogurt
5-8 mint leaves
7 strawberries
1/2 or 1 full scoop of PhD woman Exercise Support – Vanilla (optional)
1 cup Coconut Water
1 teaspoon Chia seeds from Kaizen Living (and sprinkle some on top for Instagram purposes)
1.5 teaspoon of Xylitol
